I've been trying to run a little over 3 miles a day and after my workouts I crave a combination of fresh ingredients and protein. These thai pork lettuce wraps have the perfect light crunch to them and they're not only delicious but filling and healthy!
Here is what you'll need:
1 lb thinly sliced pork
2 cups chicken stock
1/2 cup almond butter
1/4 cup trader joes red thai curry sauce
3 tbsp coconut milk
handful of coarsely chopped raw cashews
thinly sliced carrots for garnish
How to make it:
Bring the chicken stock to a boil in a pan. Add pork slices and simmer for about 5 minutes until the pork is cooked. Remove the pork and set aside to cool. In a bowl combine the almond butter, thai sauce, coconut milk and water. Make the wraps by placing the pork pieces on the lettuce, adding the sauce over each one, sprinkle a tbsp of cauliflower, a few chopped cashews, arrange a few sliced carrots and squeeze fresh lime juice on top. Roll them into wraps and enjoy!
